Lamb/ Beef with Apricots (Jardaloo)



lamb or beef 500g



onions 3, finely sliced



garlic paste 1/2tsp



ginger paste 1/2tsp



cinnamon stick 1



sugar 1tsp



dried apricots 200g, unseeded



salt to taste



red chilli crushed 1tsp (optional)



oil 3tbsp









Method:










Soak apricots in 1 cup of warm water for 5 to 6 hours or over night.







Heat oil and fry onions till golden brown.









Add garlic and ginger paste and saute for 5 minutes.








Now add meat and cook for another 5 minutes.








Add cinnamon stick, salt, red chilli and water. Mix well.


(I do like spicy food that’s why I add red chilli but you can skip) 







Cover and cook until meat is tender and half cup gravy should remain.






In another pan, heat sugar until brown on medium flame.








When sugar turns brown, add soaked apricots along with its water and bring it to the boil.






Cover and cook on low flame for 10 minutes or until apricots are soft.






Then add these unseeded apricots along with the sugar syrup to the meat.






Simmer for 5 to 8 minutes and garnish it with potato shoestrings.







Serve hot with any kind of bread.
